Aged Barbaresco Pairing Suggestion

Asking aboout what food to pair with an important bottle of wine is one of the most common questions I get. Although it is somewhat subjective, we are giving you a Michelin star chef, Gabriele Boffa’s suggestion about what to pair with our Fall 2020 wine selection, Paitin Barbaresco Vecchie Vigne Riserva 2009. We hope this idea from Locanda Sant’Uffizio inspires you!

RACK OF LAMB WITH BROCCOLI RABE & CAPERS

Chef Gabriele Boffa – Locanda Sant’Uffizio.

This is a dish created by Michelin star chef, Gabriele Boffa from Locanda del Sant’Uffizio in Cioccaro di Penango (Monferrato). This ex-medieval convent has now turned into a beautiful spa and resort! Chef Gabriele is passionate about finding the best ingredients possible, especially when it comes to meat. You can see in the photo that the lamb is cooked perfectly with just the right amount of pink, giving you a succulent and juicy piece of meat. 

The idea to add salty capers and slightly bitter broccoli rabe balances the softer flavors from the meat combining delicate and intense flavors.  Although this is not a proper recipe, we hope it inspires you to use these ingredients to create your own imaginative dish!

How to choose the perfect wine for this dish

The persistence and long finish on this Paitin Barbaresco Vecchie Vigne 2009 is perfect! The intense savory earthy aromas pair wonderfully with those similar to the lamb. This sapidity is the main reason for drinking an older Barbaresco when the body is fuller and the tannins have become smoother. 

A few words on the wine

The vineyard Sorì (the best site where the snow melts first) has been in the family since 1796! A massal selection within the Serraboella cru took place, cloning the best vines after World War 2. 2009 was considered a hot vintage which for Barolo was more extreme, but for Barbaresco was considered exceptional. Paitin is run by 2 brothers and a son who continue to strive for excellence. The Serraboella cru is on the extreme south east with soils more similar to Barolo and at a higher altitude than the rest of the Barbaresco district. We were so pleased to find this vintage for our wine club members in the last 2020 Fall shipment!
